Corn syrup is made from the starch of maize (corn) and contains varying amounts of maltose and higher oligosaccharides, depending on the grade. It is also known as glucose syrup. Corn syrup is different than high-fructose corn syrup (HFCS), which is made by converting a large proportion of glucose into fructose, which produces a sweeter compound.
